Tortilla Rollups

Ingredients

  • 8 oz., cream cheese, softened
  • 1 T. green onions, chopped
  • 1 T. parsley, minced
  • 8 whole basil, chopped
  • salt and pepper to taste
  • 1 t. fresh lemon
  • 6 whole large flour tortillas
  • 1/2 lb. shaved turkey
  • 3 carrots, julienned
  • 1 cucumber, seeds removed & julienned
  • 3 green leaf lettuce leaves, spine trimmed
  • 2 avocados, sliced

Directions

  1. Make the herbed cream cheese by combining the softened cream cheese with the onions, parsley, basil, salt & pepper, and lemon juice. Stir to combine.

  2. Spread cream cheese in a thin layer over the tortillas. Lay ingredients down the middle of the tortilla: for a “salad” rollup, omit the turkey and just use the veggies.

  3. Roll up the tortillas as tightly as they’ll go, then wrap each rollup in plastic wrap and refrigerate for one hour.

  4. To slice, cut each rollup exactly in half, then line up the two halves and cut them in half again.
