Texas Caviar

Ingredients

  • 2 cans (14 oz each) blackeyed peas, drained
  • 1 can (15.5 oz) white hominy, drained
  • 2 med. tomatoes chopped
  • 4 green onions chopped
  • 2 cloves garlic, minced
  • 1 med. sweet green pepper, chopped
  • 1 jalapeno pepper, chopped
  • 1/2 cup chopped onions
  • 1/2 cup chopped parsley
  • 1 bottle (8oz) Italian salad dressing

Directions

  1. Combine all ingredients except salad dressing.

  2. Mix well.

  3. Pour salad dressing over mixture.

  4. Cover and refrigerated to marinate for at least 2 hours.

  5. Drain and serve with tortilla chips
