Chicken Scampi

This recipe is converted from a shrimp scampi recipe. If you prefer shrimp, add 1 lb. fresh shrimp cleaned and deveined in place of the chicken.

Ingredients

  • 1 lb. linguine
  • 2 T. olive oil
  • 2 T. butter
  • 1 pinch red chili pepper flakes (optional)
  • 4 cloves garlic, chopped
  • 2 C. diced cooked chicken
  • 1/4 C. white wine
  • 1 lemon, juice and zest
  • 1 T. butter
  • 1 T. parsley, chopped
  • Parmesan cheese

Directions

  1. Cook the pasta as directed on package. Drain, reserving some pasta water.

  2. Heat the oil and butter in a large sauté pan over medium heat. Add the red chili pepper (if using) and garlic and sauté until fragrant, about 1 minute.

  3. Add the chicken and sauté until heated through; remove from pan and set aside.

  4. Add the wine, lemon juice and zest to the pan and bring to a boil. Simmer until reduced by about half, about 3-5 minutes. Add the butter, wait for it to melt; add the chicken, pasta and parsley, toss to coat and warm through.

  5. Serve with parmesan.
