Squash Apple Casserole

  • 2.5 c raw fresh winter squash, cut in 1 inch chunks
  • 1.5 c tart cooking apples, peeled and cut in thick slices
  • 1/4 c butter, melted
  • 1/4 c brown sugar
  • 1 t cinnamon
  • 1/2 c pecans, chopped
  • dash salt


  1. Arrange in a layer half of the squash chunks and apple slices in 2 qt baking dish. Drizzle half of the melted butter over them. In a saucepan combine the remaining butter, brown sugar, cinnamon, nuts, and salt. Arrange remaining squash and apples in the baking dish and pour the saucepan mixture over them. cover dish and bake in 350 F oven 45-60 minutes til tender.
