Curried Chicken Salad

Serves 6 people

Ingredients

  • 3 chicken breasts, diced
  • 2 small apples, diced
  • 1 cup grapes, halved
  • 3/4 cup walnuts, chopped
  • 3/4 cup mayo
  • 1 tbsp milk
  • 2 tbsp curry powder
  • 1/2 tsp black pepper
  • Olive oil

Directions

  1. Heat a small amount of olive oil in skillet. Cook chicken until no longer pink. Set aside to cool.

  2. In large bowl, mix mayo, milk, curry powder and black pepper.

  3. Blend in cooled chicken, apples, grapes and walnuts. Serve in pitas, with crackers, on croissants, etc.
