Pasta with tuna sauce

Ingredients

  • 2 Tbls. extra virgin olive oil
  • 1 medium onion, roughly chopped
  • 1tsp. crushed red pepper flakes
  • Black pepper
  • 2 Tbls. capers
  • 1 28-oz. can plum tomatoes, drained and roughly chopped
  • 1 lb. long pasta
  • 1 or 2 6-oz. cans tuna packed in olive oil
  • Chopped fresh parsley

Directions

  1. Bring a large pot of water to a boil (salt it)

  2. Put olive oil in a deep skillet or a medium sauce pan and turn heat to medium. Add onion, and cook, stirring occasionally, until it softens,about 5 min. Stir in chili flakes, black pepper, and capers, then tomatoes. Cook, stirring occasionally, until tomatoes begin to break up; lower heat, and cook 5 to 10 min. more.

  3. When water boils, cook pasta, stirring frequently until tender; not mushy. Just before it’s done,stir tuna into tomato sauce;breaking it into flakes.

  4. Drain pasta, add sauce and parsley.
