Bulgur Pepper Salad

Ingredients

  • 250 ml tomato juice
  • 100 g bulgur
  • 400 g (thin) carrots with greens
  • 1 tsp coriander seeds
  • 1 tbsp extra virgin olive oil
  • salt, pepper
  • 2 tbsp honey
  • juice of 1/2 lime
  • 1 yellow pepper, cubed
  • 1/2 bunch chives, chopped
  • 1 garlic clove, pressed
  • 2 tbsp cilantro leaves, chopped

Directions

  1. Bring tomato juice to a boil and add bulgur. Cover, turn heat off and let sit for approx. 35 minutes.

  2. Clean and peel carrots (leave 1/2 in of green attached), cut in half lengthwise.

  3. Heat 1 tbsp olive oil in pan and saute carrots over medium heat.

  4. Add crushed coriander seeds, salt, pepper and 4-5 tbsp water. Cover and saute over medium heat for 7-8 minutes.

  5. Uncover, add honey, and reduce liquids. Remove from heat.

  6. Combine pepper, chives, and garlic in salad bowl.

  7. Combine lime juice, bulgur, rest of olive oil and add to salad bowl. Mix well and salt and pepper to taste.

  8. Arrange carrots on bulgur salad and top with cilantro leaves.
