Cranberry Orange Relish

Ingredients

  • 3 Cups cranberries, washed and drained
  • 1 C sugar ( I reduce this)
  • 1 Tbsp. finely shredded orange zest
  • 2 C orange sections, seeded and cut in chunks
  • 1/2 C chopped pecans

Directions

  1. In a medium saucepan, over medium heat, stir together1/3 C cold water with cranberries, sugar, and orange peel. Cook, stirring occasionally, until sugar dissolves. Increase heat to medium high and simmer, uncovered, until cranberries pop and mixture begins to thicken, about 8 to 10 min. Cool completely. Stir in orange chunks. Cover and chill at least 8 hrs. Stir in pecans.
