Quinoa Cakes

Ingredients

  • 1 1/2 lbs quinoa (about 3 cups)
  • 1/2 cup white wine
  • 2 1/2 cups chicken stock
  • 2 tablespoons butter
  • 2 cups chopped red pepper
  • 1 1/2 cups chopped red onion
  • 15 snow peas chopped
  • olive oil
  • 4 eggs
  • 1/2 cup flour
  • 1 1/2 teaspoons salt
  • pepper to taste
  • olive oil for sautéing cakes

Directions

  1. Rinse quinoa according to package instructions. Melt 2 tablespoons butter in sauce pot. Add quinoa, mix well with butter and toast. Add white wine and chicken stock, bring to boil, cover and simmer until quinoa is soft (about 20 minutes). Remove from pot and cool.

  2. Sauté all vegetables together in olive oil. Remove from pan and cool.

  3. Mix together quinoa and vegetables. Beat eggs and add to quinoa with flour. Add salt and pepper. Refrigerate mixture half hour. Form into cakes and sauté in olive oil.

  4. If the cakes do not hold together, add one more egg and 3 tablespoons more flour.
