Baked Shrimp with Tomatoes and Feta

Ingredients

  • 3 tablespoons olive oil
  • 1 medium red onion chopped (about 1 1/2 cups)
  • 2 tablespoons chopped garlic
  • 2 cans chopped tomatoes, drained
  • 1/2 teaspoon each of dried oregano, basil and thyme
  • 1/4 teaspoon salt
  • pepper to taste
  • 1/2 cup white wine
  • 1/2 teaspoon sugar
  • 1 1/2 lbs shrimp, peeled and deveined
  • 1/2 lb feta cheese, crumbled
  • 3 tablespoons chopped fresh flat-leaf parsley

Directions

  1. In a large frying pan over medium heat, warm the olive oil. Add onions and garlic and cook, stirring until the onions are soft and translucent, about 5-8 minutes. Add spices and stir in, then drained tomatoes with salt, pepper and wine. Cook about 5-8 minutes longer until slightly thickened. Add sugar and stir in, cook about 2 minutes longer. Dish can be made ahead to this point, but if held warm before assembling.

  2. Preheat oven to 400 F

  3. Put about half the mixture on the bottom of a 2 qt baking dish. Arrange the shrimp over the tomato mixture, scatter the cheese over the shrimp and top with the remaining tomato mixture. Bake until shrimp are opaque throughout, but still tender when tested with a knife, about 20-25 minutes. Sprinkle with parsley and serve with crusty bread.
