Alsacian Onion Cake

Ingredients

  • 190 g flour
  • 10 g active dry yeast (8 g instant dry yeast)
  • 1/2 tbsp sugar
  • 5 tbsp milk
  • 2 tbsp olive oil
  • salt
  • 500 g white onions
  • 80 g bacon
  • 1 tbsp oil
  • pepper, salt, paprika powder, caraway
  • 1 egg
  • 150 g sour cream

Directions

  1. Sift the flour in a bowl and create a well.

  2. Mix yeast, lukewarm milk, and sugar and pout in flour well.

  3. Combine with little flour from the rim tpo create a sponge.

  4. Cover and let rise for 10 min.

  5. Add oil and salt and combine with rest of flour until the dough is smooth.

  6. Cover and let rise at a warm location for 30 min.

  7. Roll out on floured surface and transfer to baking sheet (use parchment paper)

  8. Cut onions in thin slices; cube bacon and heat oil in non-stick pan.

  9. Saute onions and bacon until onions are soft but not browned.

  10. Season with freshly ground pepper, salt, paprika powder and caraway.

  11. Spread onion mixture on dough.

  12. Whisk egg and sour cream, season, and spread over onion mixture.

  13. Bake in pre-heated oven (apprx. 400 F) for 35 min. Serve hot.
