Skillet Potatoes with Bacon and Cheddar

Ingredients

  • 4 slices cut into 1/2" pcs
  • 1 onion chopped
  • 2lb yukon gold potatoes thinly sliced
  • 1 c shredded cheddar
  • 6 tbsp sour cream

Directions

  1. Cook bacon on med until crisp. Remove with slotted spoon reserve 3 tbsp of drippings in skillet. Drain on paper towels. Add onions to skillet, cook and stir 5 min. Stir in potatoes cover. Cook on med low heat 20-25 min or until tender.

  2. Top with cheese and bacon, cook covered 1-2 min.

  3. Serve with sour cream.
