Baked Shrimp Greek Style with Feta

Ingredients

  • 1 lb. large shrimp
  • 1 1/2 Tbs. olive oil
  • 1 Tbs. white wine
  • freshly ground pepper
  • 1/4 C. unsalted butter at room temp.
  • 2 cloves minced garlic
  • 1 1/2 Tbs. freshly minced parsley
  • 1/2 tsp. minced fresh rosemary
  • 1/8 tsp. red pepper flakes
  • 1 tsp. grated lemon zest
  • 1 Tbs. freshly squeezed lemon
  • 1/4 C Panko
  • 2 oz. feta cheese
  • 2 small chopped tomatoes
  • Paprika

Directions

  1. Peel,devein,and butterfly the shrimp. Place the shrimp in a bowl and toss gently with the olive oil, wine, and pepper. Allow to sit at room temp. while you make the butter and garlic mixture. Pre-heat oven to 425 degrees.

  2. In a small bowl, mash the softened butter with garlic, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, salt and pepper until combined.

  3. Starting from the outer edge of a 14-in. oval gratin dish, arrange the shrimp in a single layer cut side down with the tails towards the center of the dish.

  4. Pour the remaining marinade over the shrimp.

  5. Spread the butter mixture over the shrimp evenly. Sprinkle the feta cheese on the top and add the tomatoes.

  6. Bake for 10-12 min. until hot and bubbly. Serve with lemon wedges.
