Humming Bird Cake

Ingredients

  • 3 C Flour
  • 2 C Sugar
  • 1 t salt
  • 1 t soda
  • 1.5 t cinnamon
  • 3 eggs beaten
  • 1.5 t vanilla
  • 1 8 oz crushed pinapple with juice
  • 1.5 C cooking oil
  • 1 C Pecans
  • 2 C Bananas
  • Frosting:
  • 1 8 oz cream cheese
  • 1 stick oleo
  • 2 t vanilla
  • 1 C pecans

Directions

  1. mbine dry ingredients. Add eggs and oil. Stir until mixed (do not beat). Stir in vanilla, pinapple and Juice, 1 C pecans and bananas. Put in 3 9" pans (or 4 8") sprayed pans. Bake 25-30 minutes at 350. Cool in pan for 10 minutes in pan. Turn out and let cool.

  2. Frosting – Beat until smooth. Spread on cake between layers and on top.
