Chocolate Eclair Desert

Ingredients

  • 1 16 oz box Honey Graham Crackers (can use low fat)
  • 2 4 oz pkg instant vanilla pudding
  • 3.5 C Cold Milk
  • 1 8 oz Cool Whip
  • Frosting:
  • 3 T Milk
  • 2 sq unsweetened chocolate
  • 1 stick butter
  • 1 T light corn syrup
  • 1.5 C powdered sugar

Directions

  1. epare pudding according to directions using 3.5 C milk. Add Cool Whip to pudding and mix well. Line bottom of 9×13 pan with a layer of Graham Crackers. Pour 1/2 the pudding over them. Add another layer of graham crackers. Pour the rest of the pudding over them. Put final layer of graham crackers on top.

  3. Melt butter and chocolate in pan over low heat. Remove from heat and add 3 T milk, corn syrup and powdered sugar & mix well. Spread over crackers while still warm. Refrigerate covered up to 2 days before serving.
