Carrot Cake

Ingredients

  • 2 C Sugar
  • 2 1/4 C Flour
  • 2 t Baking Powder
  • 1 t Salt
  • 1.5 t soda
  • 2 t Cinnamon
  • 2 t Pure Vanilla
  • 1 1/3 C Oil
  • 2 C Grated Carrots
  • 4 Eggs
  • 1 C Drained Crushed Pinapple
  • 1 1/2 C Chopped Pecans
  • Frosting:
  • 8 oz Cream Cheese
  • 1 stick butter
  • 2 t Vanilla
  • 1 box powdered sugar

Directions

  1. Mix dry ingredients in large mixing bowl; add remaining ingredients and mix for 2 minutes or medium speed. Pour into 3 greased 9 inch pans. (or use 9×13 pan) Bake as directed.

  3. Mix softened cream cheese and butter, add vanilla and powdered sugar. Frost cool cake
