Apple Fritter Rings

Ingredients

  • 1/2 c + 2 tbsp sugar
  • 3/4 tsp ground cinnamon
  • 2 c buttermilk
  • 4 tsp + 2c for frying of veggie oil
  • 2 large eggs, lightly beaten
  • 2 c flour
  • 2 tsp baking powder
  • 1/2 tsp fine salt
  • 4 med tart apples such as granny smith, cored, peeled, and cut into 1/2" thick rings

Directions

  1. In med bowl combine 1/2 c sugar and cinnamon. In another med bowl whisk buttermilk, 4 tsp oil and eggs. Stir in flour, 2 tbsp sugar, baking powder and salt.

  2. In a large heavy high sided skillet, heat 2 c oil until it registers 375 on a deep fat or candy thermometer. Oil should bubble rapidly when a drop of batter is added. In batches coat apples in batter and fry until golden brown, about 4 min per batch, flip halfway through. Transfer to a paper towel lined baking sheet to drain. toss apples in cinnamon and sugar serve immediately.
