Pumpkin Bread

Ingredients

  • 3 1/2 c flour
  • 1 tbsp baking powder
  • 2 tsp ground ginger
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 4 large eggs beaten
  • 1 1/2 c sugar
  • 1 c light brown sugar
  • 2 sticks butter melted
  • 1 (16oz) can pure pumpkin

Directions

  1. ease and flour 2 loaf pans. Adjust oven to lowr middle position. Preheat oven 350.

  2. Mix flour, baking powder, ginger, baking soda, salt, cinnamon and cloves in a large bowl. Meanwhile whisk eggs and sugars in med bowl, whisk in butter until full incorporated, and then the pumpkin. Beat wet ingredients into dry ingredients until smooth. Divide into 2 pans.

  3. Bake until golden brown and a tester comes out clean, about 50 min. Let cool a few minutes. Run a knife around to loosen. Turn onto a wire rack to cool.
