Carrot coins with thyme

Ingredients

  • 4 cups sliced carrots
  • 1 C sliced celery
  • 1/2 C chopped onion
  • 1/4 C butter, cubed
  • 2 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp dried thyme
  • 1/4 tsp pepper

Directions

  1. In a large skillet, saute the carrots, celery and onion in butter until tender. Stir in the lemon juice, salt, thyme and pepper. Heat through.
