Cheese Whiz

Ingredients

  • 1 garlic clove, peeled and cut in half
  • 2 tablespoons unsalted butter
  • 3 tablespoons flour
  • 1 1/2 cups whole milk
  • 8 ounces cheddar cheese, shredded (2 cups)
  • 1 tablespoon lemon juice (optional)
  • Salt and pepper to taste
  • Broccoli
  • Green beans
  • sugar snap peas
  • cauliflower

Directions

  1. Rub the inside of a pot with the garlic pieces.

  2. Discard garlic.

  3. Heat pot over medium-low heat.

  4. Add butter.

  5. As it melts, add flour and mix well.

  6. Slowly add milk and continue to mix.

  7. Continue cooking and stirring until mixtures begins to thicken and becomes smooth, 3 to 4 minutes.

  8. Stir in the cheese, two tablespoons at a time, adding more as it melts.

  9. Mix well until all the cheese in incorporated, about 7 to 9 minutes.

  10. Add lemon juice, if using.

  11. Add salt and pepper to tasted.

  12. Stir and transfer to a bowl.

  13. Allow it to cool a bit.

  14. Serve with vegetables.
