Energy reviving quinoa

Ingredients

  • 1 cup cooked quinoa
  • 1/3 c canned low sodium black beans, drained and rinsed
  • 1 small chopped tomato
  • 1 scallion sliced
  • 1 t olive oil
  • 1 t fresh lemon juice
  • pinch salt
  • pinch black pepper

Directions

  1. Toss to combine. Makes one serving.
