Walnut Banana Cupcakes

Ingredients

  • 1/4 C butter, softened
  • 3/4 C sugar
  • 2 eggs
  • 1/2 C mashed ripe bananas
  • 1 tsp vanilla extract
  • 1 C all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/4 C sour cream
  • CREAM CHEESE FROSTING
  • 4 oz. cream cheese, softened
  • 1/2 tsp vanilla extract
  • 1-3/4 C confectioners' sugar
  • 3 T chopped walnuts

Directions

  1. Ina small mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add banana and vanilla; mix well. Combine the flour, baking soda, nutmeg and salt; add to creamed mixture alternately with sour cream. Fill paper-lined muffin cups half full. Bake at 350 degrees for 18-22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely. For frosting, ina small mixing bowl, combine cream cheese and vanilla. Gradually beat in confectioners’ sugar. Frost cupcakes. sprinkle with walnuts. Store in the refrigerator.
