Oven-roasted tomatoes

Ingredients

  • 10 medium plum tomatoes (about 1kg will reduce by about half)
  • 2 tbsp olive oil, plus extra for greasing
  • 1 tsp caster sugar
  • 2 garlic cloves, chopped
  • 1 tbsp thyme leaves

Directions

  1. Preheat the oven to 110˚C/fan 90˚C/gas 1/4. Halve the tomatoes lengthways. Lay cut-side up on a lightly oiled baking tray, season and sprinkle with sugar. Scatter with garlic and thyme, then drizzle with oil. Put in the oven for about 3 hours until reduced to about half their size but still moist. Cool, then keep in a bowl or a jar in the fridge for up to a week.
