Penne with broccoli, goat’s cheese and sun-dried tomatoes

Ingredients

  • 750g broccoli florets
  • 600g penne
  • 300g sun-dried tomatoes in oil, chopped
  • 250g firm goat's cheese, rind removed and crumbled
  • 175ml extra-virgin olive oil

Directions

  1. Bring a large saucepan of water to the boil. Add the broccoli and cook for 4 minutes until tender. Remove with a slotted spoon to a colander or sieve and run under cold water. Set aside to drain in the colander or sieve. Add the penne to the saucepan and cook until just al dente. Drain the penne by pouring the water and pasta over the broccoli.

  2. Return the pasta and broccoli to the hot saucepan and add the tomatoes, cheese, olive oil and some pepper. Stir and serve immediately on warmed plates.
