Orange and pistachio rice pilaf

Ingredients

  • 1/4 c chopped red onions
  • 3/4 c long grain white rice
  • 3/4 c fat free chicken broth
  • 3/4 c orange juice
  • 2 t grated orange peel
  • 1 t ground cardamom
  • 1 orange, cut into 1 inch pieces
  • 2 T corasely chopped pistachio nuts

Directions

  1. Heat onions, rice, broth, juice, peel, and cardmom to a boil. Simmer, uncovered until liquid is absorbed (about 18 min). Remove from heat. Sitr in oranges and nuts.
