Lavash Pizza with Spinach and Olives

Ingredients

  • Joseph's Flax, Oat Bran and Whole Wheat Lavash - 1 Lavash
  • 1 cup grape or cherry tomatoes
  • 1-2 cups spinach leaves
  • 1 clove garlic - minced
  • 6 pitted kalamata olive - sliced
  • 1.5 oz shredded part skim mozzarella cheese
  • olive oil spray
  • salt

Directions

  1. Put grape/ cherry tomatoes on a baking sheet and spray with olive oil, sprinkle with salt and roast in 400 degree oven for 15 minutes – take out of oven and mash them up.

  2. Spray saute pan with olive oil – add minced garlic and spinach leave – cook on med heat until spinach is wilted.

  3. Put lavash on a baking sheet and top with roasted tomatoes – wilted spinach – sliced olives and mozzarella cheese.

  4. Bake in 400 degree oven until edges are crispy and cheese is melted

  5. Note – if you can transfer the lavash with topping directly onto the oven rack, this will allow for a crispier crust – just be careful because initially the lavash will not be stiff enough to hold the stopping and also be careful with cooking time, because once the lavash starts browning, it can burn quickly.
