Long Weekend Salad

Ingredients

  • 3 bell peppers- any color
  • 2 zucchinis- sliced in half lengthwise
  • 6 ears of corn- husks removed
  • 2 cups of black beans
  • 1/2 cup uncooked wheat berries(optional)
  • Dressing:
  • 3 TBSP EVO
  • 1/4 cup fresh lime juice (2 limes)
  • 2 TBSP. balsamic vinegar
  • 2 small garlic cloves- minced
  • 2 TBSP. fresh cilantro or herb of choice
  • 1 tsp. maple syrup
  • 1 tsp. dijon mustard
  • sea salt and pepper

Directions

  1. Saute or grill veggies. Add all ingredients and chill.
