Energizing Protein Power Salad

Ingredients

  • 1/2 cup uncooked spelt or wheatberries
  • 1 cup quionoa
  • 3/4 cup black beans
  • 2 tsp EVO
  • 2 large minced garlic
  • 1 red onion chopped
  • 1 yellow pepper chopped
  • 3/4 cup of raisins
  • 1/4 cup roasted almonds chopped
  • Dressing:
  • 1/2 cup fresh lemon juice
  • 1 tsp apple cider vinegar (optional)
  • 3 TBSP EVO
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes (or less if you don't like spice)

Directions

  1. Cook grains. Place in a large bowl. In skillet- add 2 TBSP EVO and garlic. Cook a couple of minutes. Add onion and saute for 6-8 minutes. Add chopped pepper/raisins/almonds and cook another 5 minutes. Prepare dressing. Pour dressing in skillet and stir.

  2. Pour veggies and dressing into grains. Stir well and serve. Makes 6 cups.
