Red Quinoa and Black Bean Veggie Salad

Ingredients

  • 1 cup uncooked quinoa
  • 1 can black beans
  • 1 red pepper chopped
  • 1/4 cup fresh cilantro chopped fine
  • 2 green onions chopped
  • 1 cup fresh corn- optional
  • 1 small avocado cut into 1 inch pieces
  • Dressing:
  • 4-5 TBSP fresh lime juice (2 limes)
  • 1/2 tsp. sea salt to taste
  • pepper to taste
  • 1 large garlic clove minced
  • 1/4 cup EVO
  • 1/4 cup fresh cilantro finely chopped
  • 1/2 tsp cumin to taste

Directions

  1. Cook 1 cup of quinoa. While it is cooking prepare the chopped veggies and whisk together dressing. Allow quinoa to cool 5 minutes then fluff with a fork. Add beans and veggies. Toss well. Drizzle dressing on salad. Bring salad to room temp before service. Makes 5 cups. Keeps in fridge for 2 days.
