Ermanno’s Rice Salad

Italian refreshing summer salad- one of our favorites!

Ingredients

  • Arborio rice
  • Zucchini
  • Summer Squash
  • Red onion- chopped
  • cherry tomatoes- quartered
  • Capers
  • Fennel - chopped
  • Kalamata olives or green olives
  • Basil- chopped fine
  • Peas
  • Asparagus
  • Cucumbers
  • 1/2 lemon
  • Extra virgin olive oil
  • salt and pepper to taste

Directions

  1. Cook arborio rice to al dente. Rinse off with cold water. If you are adding zucchini/summer squash/fennel/asparagus…boil for a few minutes to soften. Chop and dice veggies for salad. Add chopped/diced veggies to rice. Add capers and chopped red onion and olives. Add chopped basil. Squeeze fresh lemon into rice and add EVO (1-2 TBSP). Add sea salt and pepper to taste.
