Cous Cous Salad with Zucchini and Almonds

Ingredients

  • 1 box of cous cous
  • 1 zucchini - diced
  • 6 TBSP EVO
  • salt and pepper to taste
  • one lemon
  • 1/2 cup chopped onion
  • 1/2 cup chopped parsley
  • 1/2 cup chopped mint
  • crushed red pepper (to taste)
  • Sunflower seeds
  • 1/3 cup roasted almonds- chopped

Directions

  1. Cook cous cous. Fluff with fork. Saute zucchini and onions with EVO for 5 minutes. Season with salt and pepper. Stir in zucchini/almonds/onions/parsley/and mint. Season with salt and pepper. Add EVO and fresh squeezed lemon juice. Combine well.Serve or refrigerate.
