Easy Avocado and Lime Black Bean Salad

Ingredients

  • 2- 15 oz. cans of black beans- drained and rinsed
  • 1 lime juiced
  • 1/2 cup fresh cilantro chopped
  • 2 small shallots- diced
  • 1/2 TBSP EVO
  • 3/4 tsp cumin or to taste
  • sea salt and pepper to taste
  • 1 large avocado chopped- cut into 1/2 inch pieces

Directions

  1. Drain and rinse beans. In large bowl- toss with lime juice/cilantro/diced shallots/and ground cumin. Season with salt and pepper to taste. Peel and slice avocado and serve on top of beans salad (after serving in individual dish).

  2. Beans last several days in the fridge.
