Taco Soup

Ingredients

  • 2 lb ground beef
  • 1 pkg. taco seasoning
  • 1 large onion chopped
  • 1 pkg dry Hidden Valley Ranch
  • pepper
  • 1/2 tsp garlic powder
  • 2 cans of diced tomatoes
  • 1 can kidney beans
  • 1 can yellow hominy beans
  • 1 can pinto bean
  • 1 can green chiles chopped
  • salt
  • 1 large bag of corn chips
  • chopped black olives
  • sour cream
  • 2 c. shredded cheddar cheese
  • chili powder to taste

Directions

  1. Brown beef and onion in a deep kettle. Add taco seasoning/dry ranch/pepper/garlic powder/chili powder/tomatoes/beans/green chiles. Mix well. Simmer and cover for 30 minutes. Taste and add salt.

  2. To Serve: Put a handful of corn chips on bottom of bowl then soup over the chips. Top with grated cheese/sour cream/olives/etc.
