Guacamole Goal Post Dip

Ingredients

  • 1 can 16 oz refried beans
  • 1.5 c salsa
  • 1 3/4 c (7 oz) shred cheddar cheese, divided
  • 2 containers (8 oz each) guacamole
  • 1/2 t ground cumin
  • 1/3 c finely chopped fresh cilantro or parsley
  • 1/3 c sour cream
  • 6 pretzel rods
  • whole pitted ripe olives
  • pimento strips (optional)
  • tortilla chips

Directions

  1. Spread beans onto bottom of 11X7 inch dish, top with salsa and 1 1/2 c cheese

  2. Combine guacamole and cumin in medium bowl. Spoon over cheese, carefully spread to cover. Sprinkle with cilantro.

  3. Using pastry bag fitted with writing tip, pipe sour cream over cilantro to resemble yard lines of football field.

  4. ing serrated knife, cut one 5.5 inch piece from each of 4 pretzels, use with remaining 2 pretzels to form goal posts, tying with ribbon to secure. Insert goal posts into dip.

  5. Sprinkle remaining 1/3 c cheese in end zones. Stuff 1/2 olives with small strips of pimiento, if desired; place olives on dip to resemble football players. Serve with tortilla chips.
