Apple cider cake

Ingredients

  • Marzipan
  • Red, green, yellow food colors (the above two are for apple decorations)
  • 1 pkg (2 layer size) spice cake mix
  • 1 1/4 cups apple cider
  • 1/3 c vegetable oil
  • 3 eggs
  • Apple cider filling (see below)
  • Apple cider frosting (see below)
  • 2 c coarsely chopped walnuts
  • Whole cloves
  • For filling:
  • 1/3 c sugar
  • 3 T cornstarch
  • 2/3 c apple cider
  • 1/2 c apple butter
  • 2 T lemon juice
  • 2 T butter or margarine
  • For Frosting:
  • 1/2 c butter or margarine, softened
  • 14 c apple cider
  • 4 c (about 1 lb) confectioner's sugar

Directions

  1. Prepare marzipan. divide into thirds. Place each part in separate small bowl. Color 1 part with red, second with yellow, and third with gren. Cover and set aside.

  2. eheat oven to 350. Grease and flour two 9 inch round baking pans.

  3. Combine cake mix, apple cider, oil and eggs in medium bowl. Beat at low speed of electric mixer til blended. Beat at medium speed for 2 minutes. Pour batter evenly into prepared pans.

  4. Bakie 30-35 minutes until wooden toothpick comes out clean. Let cool in pans on wire rack 10 minutes, then remove and cool another 10 minutes.

  5. Prepare apple cider filling and frosting. Place 1 cake layer on serving plate, top with apple cider filing. Top with second cake layer, frost top and side of cake with apple cider frosting. Press nuts onto side of cake.

  6. Form red and yellow marzipan into apple shapes. Place cloves on tops for steps. roll out green marzipan to make leaves.

  7. For filling: Combine sugar and cornstarch in small saucepan. Stir in cider and apple butter. Cook over medium heat stirring constantly until thickened. Remove from heat. Stir in lemon juice and butter. Cool completely.

  8. For frosting: Beat until blended.
