Kentucky Derby Pie

Ingredients

  • 1 8″ pie shell
  • 1 c chocolate chips
  • 1 c pecans
  • 1 c sugar
  • 2 eggs, beaten
  • 1 stick butter, melted
  • 1/2 c flour
  • 1 tsp vanilla

Directions

  1. Preheat the oven to 350 degrees.

  2. Mix the sugar and flour. Add in the eggs and butter. Next, add the pecans, chocolate chips, and vanilla. (If you want to add bourbon, this is the place to do it–try 1/4 cup?)

  3. Pour the batter into an unbaked pie shell and bake 30 minutes. Test with a toothpick to see if it is done. The pie should be mostly cooked on the edges and a little soft in the center when you pull it out. Since this is essentially a chocolate custard, it will harden as it cools.

  4. Top with a dollop of whip cream. Enjoy!
