Pumpkin, Pine nut and Feta Salad

Cook time: 30 minutes
Serves 4 people

Ingredients

  • 80g toasted pine nuts
  • 1kg pumpkin - cubed and roasted
  • 1 red onion
  • 1/2 cup chopped parsley
  • 60mL olive oil
  • 2Tbsp red wine vinegar
  • 120g cubed feta

Directions

  1. roast pumpkin and toast pine nuts

  2. Mix it all together!
