Orange Snaps

Ingredients

  • 3 sticks butter, melted
  • 2 c white sugar
  • 1/2 c frozen orange juice concentrate
  • 2 beaten eggs
  • 4 tsp baking soda
  • 1 tsp salt
  • 1/2 to 1 tsp orange zest
  • 4 c flour
  • 1/3 c white sugar for coating

Directions

  1. Add sugar and orange juice concentrate to the melted butter. Stir well and cool slightly.

  2. Add eggs, baking soda, salt and zest, stirring after each addition. Gradually add the flour, mixing well. Cover and refrigerate dough for 2 hours.

  3. Roll the dough into 1 inch balls, and coat each one with white sugar. Place on a greased cookie sheet and flatten slightly so they won’t roll off onto the floor.

  4. Bake for 10-12 minutes in a preheated 350 oven. Let cool on cookie sheet for 2 minutes them move to a wore rack.
