Peanut Butter and Banana Cookies

Ingredients

  • 1 1/2 cups butter
  • 1 cup white sugar
  • 1 cup firmly packed brown sugar
  • 2 beaten eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup baby food mashed bananas
  • 5.1 Ounce package banana cream pudding mix (NOT sugar free)
  • 3 1/2 cups flour
  • 1 cup chopped nuts
  • 2 cups peanut butter chips
  • 1/2 cup white sugar for later

Directions

  1. Melt the butter in a large microwave-safe bowll, Stir in the sugars, beaten eggs, baking soda, and salt

  2. Measure out 12 cup baby food bananas and add in along with package of dry pudding mix.

  3. Mix in the flower by half-cup increments. Add the nuts and then the peanut butter chips. Stir until everything is incorporated.

  4. Roll the dough into walnut sized balls with your hands (if it is too sticky, chill for 30 minutes)

  5. Put 1/2 cup white sugar into small bowl and roll dough balls in. Place on a greased cookie sheet, 12 per sheet. Press them down with the heel of your hand or with a meta spatula sprayed with a non stick cooking spray.

  6. Bake the cookies or 10-12 minutes at 350 degrees F. or until they are lightly golden in color.

  7. They freeze welll so you can wrap them in foil and then put in freezer bags. Recipe makes 8-10 dozen.

  8. Note: You can also use 2/3 cup very ripe almost a black on the outside pureed bananas instead of baby food. Use 4 cups of flower instead if you do and chill dough for at least 4 hours before you attempt to make dough balls.
