Butter Chicken

Ingredients

  • 1 lb chicken breast Cubed
  • 1/2 med red onion
  • 2 med green chili chopped
  • 2 tsp garlic chopped fine
  • 1 tsp ginger chopped fine
  • 8 oz can tomato sauce
  • 1/4 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 Tbs butter
  • 1/4 cup almond powder
  • 1.4 tsp pepper
  • 2 tsp cilantro powder (corriander)
  • 1 tsp cayenne
  • 2 tsp black cumin
  • 1 tsp mustard seeds
  • 1/2 tsp garam masala
  • cinnamon
  • black peppercorns
  • bay leaf
  • cloves
  • green cardamom
  • black cardamom
  • salt
  • 3Tbsp olive oil

Directions

  1. heat some oil in a pan and brown onions until dark brown

  2. add chilies, garlic and ginger and cook for 2 minutes

  3. add yogurt, blend, add tomato sauce

  4. heat some oil in a pan and sear chicken on high heat for 2-3 minutes

  5. add black cumin and mustard seeds. Fry until they make a cracking sound (1 min)

  6. add chicken to sauce. season with salt and pepper. add cayenne and cilantro powders lower heat and simmer until chicken is cooked through (10 min)

  7. add ground almonds and stir

  8. add butter and cream simmer 5 minutes, stir.
