Baked chicken

Ingredients

  • good quality olive oil
  • 4 free-range chicken legs, thighs or drumsticks
  • 3 generous tbsp Parmesan, grated
  • 8 fresh oregano sprigs
  • 2 garlic cloves, thinly sliced

Directions

  1. Preheat the oven to 190˚C/fan 170˚C/gas 5.

  2. Put 2-3 tablespoons of oil in a heavy, shallow baking dish. Season the undersides of the chicken pieces, then set each piece on about a teaspoon of Parmesan, a sprig of oregano and a few slices of garlic. Drizzle over a little oil, then scatter the dish with the remaining Parmesan, oregano and garlic. Bake for at least 1 hour, depending on the size of the joints – you should be able to twist the bone and leave the meat in place.

  3. Serve with plenty of bread to mop up the delectable gloopy bits in the pan.
