Company Meat Loaf

Ingredients

  • 3/4 cup V8 juice
  • 2 eggs
  • 1 medium green pepper, finely chopped
  • 1 medium onion, finely chopped
  • 2/3 cup quick-cooking oats
  • 2/3 cup chopped celery
  • 2/3 cup sliced stuffed olives
  • 1/2 cup cubed cheddar cheese
  • 1 1/2 teaspoons slat
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1 pound lean ground beef
  • 1/2 pound lean ground pork
  • Ketchup

Directions

  1. In a large bowl, combine the first 1 ingredients.

  2. Crumble beef and pork over mixture and mix well.

  3. Shape into a loaf in a greased 11 inch by 7 inch by 2 inch baking dish.

  4. Bake, uncovered, at 350 degrees for 1 1/4 hours or until meat is no longer pink and a meat thermometer reads 160 degrees.

  5. Drizzle top of loaf with ketchup.
