Paprika herb omelette

Ingredients

  • 3 fresh free-range eggs
  • large pinch paprika
  • small knob butter
  • small handful mixed chopped fresh herbs such as parsley, chives and basil

Directions

  1. Put the eggs and paprika into a bowl and lightly whisk to combine. Season with some sea salt and black pepper.

  2. Put the butter in a 20cm non-stick frying pan over a medium-high heat. When the butter starts to foam, add the egg mixture. As the base begins to cook, use a fork to draw it aside and allow the uncooked egg to run beneath. Continue doing this until the omelette is set but still soft.

  3. Scatter the herbs on top. Use a palette knife to fold over one half of the omelette, then carefully slide onto a serving plate. Serve with bread and a dressed green salad.
