Cheese Dumplings (Kaesespaetzle)

Cheese Spätzle is a traditional German way of serving this favorite German noodle. Using either homemade or store-bought noodles, the resulting dinner is delicious. To me, this is an elegant upgrade to the American Macaroni and Cheese•Try this with Cheddar or Jarlsberg cheeses or a combination of the two.
•Serve with a green salad, such as our lettuce salad with grapes.
This is also served traditionally with sauerkraut and would go great with German meatloaf.

Ingredients

  • 3 c. Spaetzle (12 oz. dry Spaetzle)
  • 2 or 3 c. Emmentaler cheese
  • 2 tbsp. butter
  • 2 onions,sliced
  • salt and pepper

Directions

  1. •Preheat oven to 325° F.

  2. •Heat butter (or oil) in skillet and sautee onions until tender, about 5 minutes.

  3. •Butter casserole dish. Begin by layering with 1/3 of the spaetzle, season with salt and pepper, sprinkle with 1/3 of the cheese. Repeat, until you have layered 3 times.

  4. •Top with the sauteed onions.

  5. •Bake, uncovered, about 20 – 30 minutes, or until bubbly and slightly browned on top.
