Cinnamon Funnel Cakes

Ingredients

  • Vegetable oil
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 eggs, lightly beaten
  • 1-1/4 cups milk
  • 1 cup powdered sugar

Directions

  1. Preheat oil to 375° F!. in Deep Fryer!.

  2. Combine next 5 ingredients in mixing bowl!. Stir into flour mixture until smooth!.

  3. Combine beaten eggs and 1 cup milk in another bowl!.

  4. If batter is too thick, add more milk!.

  5. Fry one cake at a time!.

  6. Holding finger over funnel spout, pour 1/3 cup of batter into funnel!. Hold funnel over preheated oil and release finger!.

  7. Using a circular pattern, pour batter in fryer!.

  8. Fry 1-1/2 minutes or until golden brown!.

  9. Turn and fry another 1-1/2 minutes!.

  10. Transfer cake to absorbent paper to drain!.

  11. Sprinkle with powdered sugar!.

  12. Repeat process until batter is used!. Serve warm!.

  13. Alternately: Batter may be slowly poured in hot oil from a glass measuring cup!.
