Pork and Beans Bread

Ingredients

  • 15 ounce can of Pork and Beans
  • 4 eggs beaten
  • 1 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 and 1/2 teaspoons cinnamon
  • 1cup chopped pecans or walnuts.
  • 3 cups flour

Directions

  1. Preheat oven to 350

  2. Spray two 9 inch loaf pans with Pam.

  3. Do not drain the can of pork and beans. Pour the whole can into food processor or blender can puree until smooth.

  4. Place beaten eggs into a large mixing bowl.

  5. Add the pork and beans and mix well.

  6. Add the oil and vanilla. Mix well.

  7. Add sugar. Mix

  8. Then add baking soda, baking powder, salt and cinnamon.

  9. Stir until well incorporated.

  10. Stir in the chopped nuts.

  11. Add flour in one cup increments, stirring well after each addition.

  12. Spoon half the batter into each loaf pan.

  13. Bake at 350 for 50 or 60 minutes, testing with a cake tester.

  14. Cool on rack for 20 minutes.

  15. Run a sharp knife blade around the inside of all 4 sides of each pan to loosen the bread, then tip out on the wire rack.

  16. Cool the bread completely.

  17. Cover in plastic wrap.
