Mediterranean Chicken

Ingredients

  • Chicken Mediterranean (from Craftsbury)
  • Oven 350
  • Serves 8
  • You can also use fish or tofu with this recipe
  • 4 lbs boneless chicken breast
  • 2 cups seasoned bread crumbs
  • 1/2 cup lemon juice
  • 1/4 cup olive oil
  • 1/2 cup water
  • 1/4 cup tamari (soy sauce)
  • 1/4 cup balsamic vinegar
  • 1 Tbsp crushed garlic
  • 1 tsp oregano
  • 1 tsp basil
  • 1 Tbsp chopped green olives
  • 2 Tbsp chopped parsley
  • 1 tsp black pepper

Directions

  1. Roll chicken breasts in breadcrumbs, then lay them in a large baking pan. Combine rest of ingredients and spoon half of mixture over the chicken. Bake uncovered for 25 minutes at 350 degrees. Then spoon remaining sauce over chicken and bake another 25 minutes or until meat thermometer reads 170 in the thick pieces.

  2. te from Rachel: I didn’t think there was quite enough sauce to pour over the chicken so I made 1.5 x the amount above. (I poured all of the mixture over the chicken and then added another 1/2 of the recipe after baking for 25 minutes.)
