Viking Cookies

Ingredients

  • 4 sticks butter
  • 2 cups brown sugar
  • 2 cups white sugar
  • 4 beaten eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 1/2 cups flour
  • 3 cups white chocolate chips
  • 3 cups rolled oats, uncooked

Directions

  1. Use an electric mixer if you have one. If you don’t, this recipe can be mixed by hand too.

  2. Melt butter in a bowl in the microwave.

  3. Mix brown sugar and white sugar with butter, then set aside to cool.

  4. When the mixture is about room temperature, mix in the beaten eggs.

  5. Then add the baking powder, baking soda, salt, vanilla, and spices.

  6. Add flour in 1/2 cup increments, mixing after each addition.

  7. Add and mix white chocolate chips.

  8. Add and mix rolled oats.

  9. Drop teaspoon sized amounts of dough onto cookie sheet, and flatten slightly with hand or spatula.

  10. Bake at 350 degrees for about 11 minutes.
