Pistachio Winks

Ingredients

  • 1 cup butter (2 sticks)
  • 3 cups sugar (white, granulated)
  • 4 eggs, beaten (in a cup, with a fork)
  • 2 Tbl molasses
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 tsp vanilla
  • 2 cups pistachios (just meat), finely chopped
  • 4 cups flour (packed when measured)

Directions

  1. Melt butter in a microwave-safe bowl, pour butter into a mixing bowl and add the sugar. Mix well, and let mixture cool until it is room temp.

  2. Mix in the beaten eggs, add molasses and mix well.

  3. Add salt, baking soda and vanilla. Stir everything together and then mix in the pistachios.

  4. Add the flour in 1 cup increments, mixing after each addition.

  5. Form the dough into 1 in. balls with your fingers and place on a cookie sheet that has been sprayed with non-stick cooking spray…12 balls per sheet.

  6. Spray the flat bottom of a water glass with cooking spray. Dip the glass in a bowl of white sugar and flatten the balls on the cookie sheet. Dip the glass into the sugar after every ball you flatten.

  7. If you want to garnish with the cherries, press one piece into each cookie.

  8. Bake the cookies at 350F for 10-12 minutes. Let the cookies set up on the sheet for one minute, and then remove them to a wire rack to finish cooling.
