Chocolate Chip Pretzel Cookies

Ingredients

  • 1 cup softened butter (2 sticks, 1/2 pound)
  • 2 cups white sugar
  • 3 Tbsp. molasses
  • 2 tsp. vanilla
  • 1 tsp. baking soda
  • 2 beaten eggs
  • 2 cups crushed salted thin stick pretzels (measure after crushing)
  • 2 1/2 cups all-purpose flour (packed)
  • 1 1/2 cups semi-sweet chocolate chips

Directions

  1. Preheat oven to 350 degrees, rack in middle position.

  2. *Dough gets really stiff- you might be better off using an electric mixer.

  3. Mix softened butter with sugar and molasses. Beat until mixture is light and fluffy, and molasses is completely mixed in.

  4. Add vanilla and baking soda. Mix in well.

  5. Break eggs into a glass and whip them up with a fork. Add them to your bowl and mix until they’re thoroughly incorporated.

  6. Put pretzels in a zip lock plastic bag. Seal it carefully and place it ona flat surface. Take rolling pin and run it over bag, crushing pretzels inside. Do this until there are no large pieces and larges is a 1/4 inch long.

  7. Measure out 2 cups of crushed pretzels and into dough in bowl.

  8. Add 1 cup of flour and mix in. Then add second cup and mix thoroughly. Add final 1/2 cup of flour and mix in.

  9. Measure out a cup and a 1/2 of chocolate chips and add to cookie dough. If using an electric mixier, mix in at slowest speed. Or, stir in chips by hand.

  10. Drop by rounded teaspoons onto greased cookie sheets. Place 12 cookies on each standard size sheet.

  11. Bake cookies at 350 degrees for 10-12 minutes or until nicely browned.

  12. Let cookies cool for 2 minutes and then remove them from baking sheets. Transfer to wire rack to finish cooling.
